Cold-filled ketchup: assess emulsion condition
A guide to preparing a trial for product sensitive to mixing and pumping, rather than a verified customer-results report.
Describe the initial ketchup condition and actual cold-fill temperature. If mixing, waiting or pumping changes uniformity or liquid separation, provide photographs and observation times. Cold filling alone does not define acceptable processing or storage conditions.
Compare samples before feeding, after transfer and after filling. Record mixing, pumping and pause conditions. Agree with the process owner on uniformity criteria, acceptable changes and reassessment time; pump type alone cannot guarantee emulsion preservation.
Also review foam, neck contamination, closing and pack condition. Sanitation, processing and shelf-life requirements depend on the specific recipe and pack. This page does not establish sterility or finished-product shelf life.
